I cannot seem to find rhyme or reason for the display. It would be great to establish layers, barring that I'd like it to be predictable -- something like the last node created is on top; other nodes will be hidden or partially hidden.
Is there a predictable behavior that I haven't uncovered yet?

No, there is no good way to predict which nodes will appear on top of others. Layers has been in our wish list for a while now.
